I am in the process of trying out some new recipes for Thanksgiving. One of those recipes is a stuffing actually a dressing. It is basically your onion/celery dressing with dried apricots and nuts added. I thought I would try it sometime this week by butterflying boneless chicken breasts and stuffing them with the mixture. Then about two-thirds of the way through the baking time start basting them with a concoction of dried apricots that have been stewed in chicken broth that is then pureed in the food processor with a little drizzle of honey. Maybe a dash of white pepper? Sounds good...will it meet my expectations? I'll let you know.

With that Metformin, I'm either too dizzy or nauseated to eat so I have absolutely No appetite. Mayyybe I'll stop and get a veggie sub from Subway. I dunno. beh

Tonight I had my favorite Chinese dish. A large order of 'moo goo gai pan'. It's a Cantonese dish of steamed rice and chicken, white button mushrooms, snow peas, bamboo shoots, water chestnuts and Chinese cabbage. Plus a large hot & sour soup and an egg roll (which I didn't eat because it was cold).

Usually I walk or ride my bike to my favorite Chinese take-out joint. Tonight I had it delivered because on Saturday morning I fractured two bones in my right foot - the second and third matatarsal. I was running on the lakefront path and stepped on an odd shaped jagged piece of loose sidewalk concrete. Yes, I know most runners injuries happen because they aren't watching where they are running. I looked away only briefly - that's all it takes...

I called a cab and then my doctor's office. One of the affiliated hospitals was only a mile away. I got an x-ray within an hour and then sat for 3 hours waiting for a doctor to view the x-ray. So now I've got a removable walking cast. It's kinda like a ski boot with foam pumped in, which hardened to form a soft yet firm mold. It's awkward to walk in but I'm getting used to it.

Ouch, no more bike riding for a while.
Why do they call them snow peas? Do they grow them in the snow?

I had rice and stir fry vegys, michellini's and something with hamburger, I haven't made it yethappy I am watching "The great escape" with Steve Mcqueen.

weezie, I found this definition of snow pea, which is NOT to be confused with the cause of 'yellow snow'. Laugh

The snow pea is a variety of pea eaten whole in its pod while still unripe. It is one of the earliest known cultivated plants. It is called the snow pea because it grows at the end of winter, just before the last spring freeze.

Thanks Guy, do they taste like regular peas? If they are eaten unripened are they uncooked also? Do I ask to many questions, lol? Most all of them died after the great escape, I was surprised. The hero's are never supposed to die.

weez, Immagine a green bean that has been severely flattened. They are very delicious. Try Sugarsnap Peas too. yum!

I can't have chinese or those mushrooms. I'm in a no fungus/yeast kick for this detox thing I'm doing with my greening...although I do love those lit-tle but-tuns, they are so goooood.

Thanks Nic, in all your studies maybe you could pass some on to me, I am to lazy to become my own Dr and the Dr's don't know what they are doing. My thyroid has been on the fritz for a lotta years now, Don't want to kill it but...they do. What are you doing to make your thyroid healthy if that's possible? I just take my little pill with all it's side effects adjusting it as needed and carry on.

I left work early because my good foot was hurting more than my foot in the cast because it made me walk funny...

So I met a friend for dinner at the neighborhood Vietnamese restaurant. I ordered the pho soup and shrimp spring rolls. That was the entire meal. The bowl was HUGE! Actually very filling.


INFORMATION ON VIETNAMESE PHO SOUP:
Phở, written as pho and pronounced "fuh" by English speakers, is a traditional Vietnamese noodle soup dish. Phở is served as a bowl of white rice noodles in clear beef broth, with thin cuts of beef (steak, fatty flank, lean flank, brisket). Variations featuring tendon, tripe, meatballs, chicken leg, chicken breast, or other chicken organs (heart, liver, etc.) are also available.

The broth is generally made by simmering beef (and sometimes chicken) bones, oxtails, flank steak, charred onion, and spices, taking several hours to prepare. Seasonings include Saigon cinnamon, star anise, charred ginger, cloves, and sometimes black cardamom. The noodles, called bánh phở in Vietnamese, are traditionally cut from wide sheets of fresh rice noodles similar to Chinese Shahe fen, although dried noodles (also called rice sticks) may also be used.

The dish is garnished with ingredients such as green onions, white onions, coriander leaves, ngò gai (saw leaf herb), mint, Thai basil, lemon or lime, bean sprouts, and chile peppers. weez, David actually recommended me a book "The Thyroid Solution" (I can't remember the author and my mom has it but I'll find it and email you soon, I see ma tomarrow) and it has helped me a lot.

If you are close to Cleveland or have the funds to travel (and the dosh) I STRONGLY recommend going there. Dr. Skugor is (actually published a book on thyroid/adrenal issues in Borders) the doc my mom went to and I was going to go to but if you have PCOS issues, Get someone with experience in women's issues as well as thyroid can screw up your other glandulars (ovaries, pituitary, low D, insulin resistance-bad!)

Most doctors dont know squat about thyroid or just barely passed by it to further on in medical school. Some are good but they dont know and some are retards who are sponsored by medicinal companies to pay for medical school, they dont give two poops about it. But that book Daj recommended me was actually pretty good. Aside from the oversexed and infertile parts I felt the person was writing my life.

Ask them WHY they want to remove your thyroid. It it completely dead? DONT DO IT!!!! or at least explore MANY OTHER options. (I'm not yelling, I'm cap'ing for emphasis) before you decide to finally do it. PLEASE READ THE BOOK before you make a decision to do so.

Diet is another thing. If your thyroid is auto-immune (your body attacks it like a flu virus) a lot of research is being done proving that the raw green veggies lifestyle is actually REVERSING it. Yep. As much as I love a good medium rare porterhouse my uncle mark grills, I decided to buck up and do what's healthy for me.

What's sad is it's not the cow, it's the crap we inject in the cow and the dishonesty of the meat/dairy industry that snowballs us. They cooked fattened cows in biblical times, but then they didn't have rBGH or Antibiotics and inhumane slaughter practices either.

Greens (vegetation) have chlorophil which have the same chemical components of blood. Coconut water (nature's most perfect electrolyte) was used in war times as plasma replacement. sprouted beans and sprouts (alfalfa, etc...) have perfect protein as well as oxygen and enzymes to heal the body.

Also get the book Ph Miracle by Dr. Robert Young. and the DVD Crazy Sexy Cancer. by Kris Carr. Her outtakes are more informative if you ask me than the whole movie but ti's worth watching.

It's like this. You can eat crap...and get crap....or you can do what's right and heal your body. I chose to heal. I can always have a steak later. And if I never do, I'm sure the earth still turns.

Thanks Nic, this is very informative. I don't recognize PCOS so I am not sure what it is. They want to kill it with radio active iodine, just like they give you for a thyroid scan except it kills it. Only because the way it is it is hard to treat as it fluctuates. I am supposed to go in for regular readings in order for them to treat it correctly but that is still iffy as it can change daily if it wants. I have an endo and she seems good and she consulted with 3 endos at the hosp. so There are many involved with the diagnosis and treatment. I don't want to kill it as then I am always dependent on the meds and supposedly will die within 2 weeks? without the meds once it is dead. AT least now I am not dependent on it for my life. It's a tough decision as it is hard to treat it the way I am now not to mention the side effects of the meds and the fact that a lot is not treated with this med. I have read some on it but there seems to be so many variations. I am glad you are going the way you are going and sure hope that it works for you!! Thanks again for the tips!

Guy, that looks soooooooo delicious!!! Don't know what I am eating tonightsad If I had that available I wouldn't have a problem deciding.

Probably a cheese burger from the hamburger I cooked the other night, with onions, mayo and mustard and don't forget the ketchup.
